A healthy version of ketchup using dates as the sweetener.

Sugar Free Ketchup

Equipment

  • 1 Food Processor or Immersion Blender
  • 1 Medium Size Pot

Ingredients

  • 28 oz tomato, canned can use crushed, puree, diced, stewed, whole * see note below
  • 1/3 cup apple cider vinegar
  • 2 tsp salt
  • 1 tsp pepper
  • 1 medium onion or 1 tsp powder
  • 3 cloves garlic or 1 tsp powder
  • pinch allspice
  • pinch celery seeds
  • 3 oz dates, pitted
  • 1/8-1/4 cup choice of oil *for sautéing
  • 1/4-1/2 cup water *needed to get remaining tomato puree out of can
  • 1 tsp powdered mustard *optional
  • 1/2 inch fresh ginger or 2 tsp powder *optional
  • 1/2 tsp cayenne or to taste *optional

Instructions

  • Sauté onion, garlic & ginger, if using, in your choice of oil for about 2 minutes.
  • Add spices & continue cooking for 30 seconds.
  • Add tomatoes, water, vinegar & dates.
  • Simmer on low to medium heat for 30-45 minutes, depending on what type of tomato used, until desired consistency has been achieved. Stir often to avoid contents sticking to the pan.
  • Let cool for 10-15 minutes. If too hot when blitzing, it will splatter.
  • Blitz with an immersion blender or food processor until smooth.
  • It will keep for a few weeks in the fridge. Can also freeze some for later use.

Notes

The simmer time will depend on the type of tomato that is used, one that contains more water will take longer to become a thicker consistency.
